There’s food so delicious it takes the little sanity we have left away from us, traditional dishes that make us forget about everything that’s bad and which put a happy cherry on our day. These traditions should never be missed. We need them as our fast-paced lives lead us many times to eat anything and forget about having a delicious, slow-paced meal. But here’s the answer to our prayers, the Illunbe restaurant.

Following its success at La Moraleja (Alcobendas) and with the momentum with which only the brave know how carry out the projects in which they believe, chef Jose Angel Aguinaga runs a team that fears nothing  that serves delicious Basque cuisine.

Talking about the produce in the kitchen of Illunbe means talking about excellence. Market food, from the stall of the Pasajes fish market in Guipúzcoa (if we talk about fish). Who could say no to a magnificent turbot, an excellent bream or hake neck that brings us back to the idea that good cuisine actually exists?

As for meat, Aguinaga is responsible for assuring the exact point of maturation of all the beef he serves. The chef doesn’t forget your wish to eat a good steak, beef steak or tenderloin, which so many times you have ordered in other restaurants with poor results. Here you won’t have any problems.

Lobster and squid salad with smoked sardines, Guetaria anchovies in Arbequina oil, Mendávia lukewarm asparagus, grilled Orio txikis with leeks, broth with cockles and scampi sauce or grilled foie with apple cream and Tempranillo are just some of the added dishes to a lux offer hard to find in Madrid.
