Until recently, geese were a delight only a few could afford. But now, in Malasaña, next to Plaza Tribunal, everyone can enjoy the gastronomic virtues of this delicious bird at GansoTaberna. Chef Jose Luis Ruiz Comino has recovered traditional goose recipes and has created new ones. The result is an amazing menu with proposals from around the world following the migratory route of geese.

The place is small, with a good atmosphere and a modern décor including high tables and stools. Geese at GansoTaberna come from organic farming and are served with goose confit hummus, goose mimosa salad, gralaz salmon strudel with sour cream, duck and crumbs with grapes or a spectacular peluchona potato with vera paprika. The menu also features dishes without goose, like Manchego cheese flan with candied onions or sauteed baby broad beans with Iberian ham and melted brie.
